In a world far removed from cookery shows and generic salmon vol-au-vents, true pleasure can be enjoyed wherever the tastes and produce vary according to region and season, and wherever culinary variation and biodiversity are practised.It begins wherever canteens and school kitchens attempt to raise nutritional awareness by using good produce, and it begins with knowing where the produce has come from, who has produced it and how it has been processed.

With 30 years of wide-ranging experience in the hospitality industry, gastronomy, academia and professional associations, not to mention my proven expertise in evaluating wines, I am in an ideal position to advise and guide you as you plan your corporate catering projects and mass catering events or consider gastronomic concepts, responsible food production, fair trade and regional development.

SCHOLARSHIP & LEARNING

Sharing and developing knowledge.

In 2007, Eckart Witzigmann and I initiated a degree programme in Food Management and Culinary Studies at the Baden-Württemberg Cooperative State University (DBHW). The programme is now well established at the Heilbronn campus.

This bachelor degree programme combines business skills with detailed product knowledge and cultural-historical aspects, and is complemented by excursions such as a visit to Piedmont, the home of the Slow Food movement. Those enrolled on the course, who may be highly-qualified food scouts in the food industry or successful restaurateurs, will gain an in-depth knowledge of product quality, the cultural history of nutrition and research on the science of taste.

Otto Geisel

Otto Geisel comes from a family with a long history in the hospitality industry. He trained as a chef, gained his diploma in Hotel Management and spent 25 years managing a hotel with a starred restaurant; for 10 of those years he used local produce. He is a long-standing member of the Board of Directors of Slow Food, a journalist and a publicly-appointed and sworn expert for wine evaluation.

  • Long-standing Member of the Management Board of the Deutsche Akademie für Kulinaristik (German Academy for Culinary Studies)
  • Development and organisation of the International Eckart Witzigmann Prize
  • Initiation and organisation of the Slow Food trade fair “Market for Good Taste” in Stuttgart, Germany
  • Co-founder of the bachelor degree in Food Management
  • Permanent member of the renowned association of wine experts, the “Grand Jury Européen”
